This White Chicken Chili comes from Erica, one of our designers, and it’s been a cherished staple in her family for years. “This recipe is pure comfort food. My mom used to make it on cold fall nights, and now it’s one of my go-to meals when I want something easy, cozy, and guaranteed to make everyone happy.” With tender chicken, creamy white beans, and a subtle kick from green chiles, this chili is bound to become a family favorite.

Ingredients
1 Tbsp oil
1lb chicken, cubed
1 medium onion, chopped
1.5 tsp garlic powder
3 cans (15.5 oz each) of Great Northern Beans, rinsed and drained
14.5 oz chicken broth
8 oz chopped green chiles
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1 cup sour cream*
1/2 cup whipping cream*
Instructions
1. Sauté the chicken
Heat oil in a large pot over medium-high heat. Add the cubed chicken, chopped onion, and garlic powder. Cook until the chicken is no longer pink and the onions are tender, about 5 minutes.
2. Build the base
Stir in the beans, chicken broth, green chiles, and all the seasonings (salt, cumin, oregano, pepper, and cayenne). Bring to a boil.
3. Simmer
Once boiling, reduce the heat to low and let the chili simmer for about 30 minutes, stirring occasionally.
4. Make it creamy (optional — see notes)
Remove from heat and stir in the sour cream and whipping cream until smooth and creamy.
5. To Serve
Top each bowl with shredded cheddar cheese and an extra dollop of sour cream. This chili pairs beautifully with a fresh salad, oyster crackers, or a slice of warm bread.
Notes*
Erica often makes this recipe without the sour cream and the whipping cream to make it dairy free, and it’s still just as good. Alternatively, these ingredients can be subbed with yogurt for additional protein.
